Lumpwood charcoal is made from real hardwood, which gives it a natural flavor that can enhance the taste of grilled or smoked foods.
Briquettes are a type of charcoal that is made from compressed charcoal fines and a binder, such as starch or clay. They are a popular choice for outdoor grilling and barbecuing because of their consistent shape, size, and burn time.
Large, consistent pieces: Restaurant grade charcoal typically consists of larger, more consistent pieces that are easier to manage and produce more even heat. High carbon density: Restaurant grade charcoal often has a higher carbon density.
Fire wood can be used for cooking, lighting inside the house for warmth .
This charcoal is obtained from African hardwood when grasslands on farms are cleared from encroaching thorn bush trees e.g. Acacia Mellifera or Black Thorn and alien invasive species like Prosopis. The encroacher timber species are harvested and carbonised in circular steel kilns to produce long burning charcoal. The shrubs and trees are selected and measured very carefully. These are not removed from the surface of the land completely. Some shrubs and trees are left as they grew in an original distance from each other. Biodiversity therefore increases. Stems which are thicker than 18cm are not be removed..
After the trees have been felled and cut into suitable sizes, the wood needs to dry out preferably for about one month before it can be stacked into the kiln. 1 ton of charcoal is obtained from 5 tons of wood. The charcoal burns or smoulders for about 3 days. Thereafter the charcoal is spread out for 3 days to cool off before it is sorted and transported to the packing site. Subsequently the charcoal is packed into bags according to the desired sizes and the client’s requirements
To assure high quality, charcoal briquets are tested for moisture content, sulphur content, and how much smoke is produced, to name a few. The amount of residue left over after burning the charcoal is determined by ash testing.
The charcoal is sieved by hand to remove material which passes a 1.25 inch (31.75 mm) screen..
BBQ charcoal is preferred for grilling because it produces a distinct smoky flavor that many people find desirable, can reach high heat for searing, is relatively inexpensive, and offers versatility for both direct and indirect cooking methods, allowing for different cooking styles depending on the food being prepared.
Charcoal is primarily used because it burns hotter with almost no smoke. It also allows you to sear meat with few flare ups. It last longer than wood chips. It also adds its own flavor that is different from smoking wood.
